The Winnipeg Jets selected Perfetti, a forward from Whitby, Ontario, with the No. 10 pick in the 2020 NHL Draft. The Jets had Crystal Hawerchuk, wife of the late Hall of Fame center Dale Hawerchuk, the best player in the history of the original Jets, announce the selection.

Perfetti proved himself in his age 22 season with 38 points (19 goals, 19 assists) in 71 regular-season games and making his Stanley Cup Playoff debut. He signed a two-year, $6.5 million contract (an average annual value of $3.25 million) with the Jets on Sept. 24, 2024. He tied Game 7 of the 2025 Western Conference First Round when he scored with 2.2 seconds remaining in the third period en route to Winnipeg's 4-3 win in double overtime against the St. Louis Blues at Canada Life Centre. At 59:57, it was the latest game-tying goal in a Game 7 in NHL history, besting Matt Cooke of the Vancouver Canucks (59:54) in a 3-2 overtime loss to the Calgary Flames in the 2004 Western Conference Quarterfinals.

Perfetti played center and wing for Saginaw of the Ontario Hockey League in 2019-20 and set a team record and finished second in the OHL with 111 points (37 goals, 74 assists) in 61 games. That came after he scored 74 points (37 goals, 37 assists) in 63 games for Saginaw in 2018-19, his first season in the OHL.

He was rated No. 5 among North American skaters in NHL Central Scouting's final rankings and was the highest-drafted player in Saginaw team history. His two goals in 10 games helped Canada win a gold medal at the 2021 IIHF World Championship.

Perfetti established his own charitable foundation, Fetts' Friends, that works in conjunction with a local children's hospital to give back to the community.

Perfetti made his NHL debut Oct. 13, 2021, playing 9:49 in a 4-1 loss at the Anaheim Ducks. He scored his first NHL goal in a 4-3 overtime loss to the Washington Capitals on Jan. 18, 2022.
