Demko was selected by the Vancouver Canucks in the second round (No. 36) of the 2014 NHL Draft following his freshman season at Boston College, where he went 16-5-3 with a 2.24 goals-against average and .919 save percentage.
In three seasons with the Eagles, Demko was 62-26-10 with a 2.07 GAA and .928 save percentage. He helped Boston College advance to the NCAA Frozen Four twice (2014, 2016), was a finalist for the 2016 Hobey Baker Award and won the Mike Richter Award as the NCAA's most outstanding goalie. His 10 shutouts in 2015-16 are a Boston College record and is the second most in college hockey history for a single season.
Demko signed a three-year, entry-level contract with the Canucks on April 20, 2016. He played his first professional season with Utica of the American Hockey League in 2016-17 and went 22-17-1 with a 2.68 GAA and .907 save percentage. He played most of the following season with Utica as well, going 25-13-7 with a 2.44 GAA and .922 save percentage. He played in the 2018 AHL All-Star Classic.
Demko was recalled on an emergency basis by the Canucks on March 31, 2018 and made his NHL debut the following night, finishing with 26 saves in a 5-4 overtime win against the Columbus Blue Jackets.
He signed a two-year contract with the Canucks on April 24, 2019 and played an NHL career-high 27 games (25 starts) before the 2019-20 season was paused due to concerns surrounding the coronavirus.
Demko became a Vezina Trophy finalist for the first time by going 35-14-2 with a 2.45 GAA, .918 save percentage and five shutouts in 51 games of the 2023-24 season. He helped the Canucks win the Pacific Division, their first division title in 10 years, and finish with 109 points, 26 more than in 2022-23.
Demko signed a three-year, $25.5 million contract with the Canucks on July 1, 2025.
